To make this salad, you will need:

-1 head of lettuce

-2 tomatoes, diced

-3 cucumbers, sliced thinly

-1 cup of carrots, shredded with a cheese grater

-1 cup of black beans (canned or cooked)

-¼ cup of red onion, finely chopped (optional)

For the dressing:

In a small bowl combine ½ cup of vinegar, ½ cup of oil, and 1 teaspoon of salt and pepper to taste. Whisk until smooth then pour over salad ingredients just before serving
